Khar is basically an alkaline filtrate of ash obtained from burning the dried fiber of a plantain (banana) tree - 'Bheem Kol' (Musa Balbisiana). This water is called 'Khar' and is used in cooking delicious food dishes.

'Khar' is mixed with the main ingredient of the dish along with some other spices and then fried. The ingredient may vary in wide range, from papaya to bottle guard, from fish to rice, etc.


The pH of the alkali is between 13.5 - 14.

Khar making is a normal process prevailing in the village areas of Assam. But it is reddish in colour while Shri Prasanta Kr. Sarma can make clear banana alkali without using any chemical process.


The natural khar which is extracted from banana is called 'Kol Khar'.
